Bikini Recipe

Serves 10 servings

Ingredients for the Clementine Cordial (produces 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g caster sugar

For the Cocktail (makes 850ml, enough for 10)

400ml premium vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine cordial (as made above)
Fresh cranberries, for garnish
Mandarin essential oil, to finish

Instructions

To prepare the Syrup: Put all the ingredients in a pan, bring to a light boil, agitating so the sugar melts. Next, turn off the heat allowing it to cool down fully. Pour into a sterilised bottle, seal and refrigerate it chilled, where it will keep for up to a month.

For the Premix: Combine the specified spirits and syrup into a large bottle, let it rest for an hour, then strain preferably using a fine cloth, making it fully clarified.

For serving: Add 85ml of your cocktail base into a stirring glass filled with ice, gently stirring gently for one minute until cold. Pour into a frosted cocktail glass or a similar vessel, decorate with a few cranberries adding the final touch by giving it a light spray of the essential oil above the glass.
